MEET THE TEAM

Justin Gaspar - Founder
Justin is a Hapa Bay Area native to San Diego transplant. He has worked in all sorts of kitchens, but has always gravitated towards baking—especially laminated pastry (i.e. CROISSANTS!) and naturally-leavened breads. Justin recently won an episode of "Baker's Dozen" on Hulu, where he debuted his ube bibingka custard buns. He hopes to share his tastes and experiences with the San Diego community, as well as help contribute to the growing food scene in the awesome city he now calls home.

Juan Lopez - Production Manager
Juan Lopez is a San Diego native with ten years of experience in Michelin star restaurants and viennoiserie. He discovered his desire to learn from cultures other than his own at age nine, beginning with seeing Ina Garten's profiteroles on TV. What Juan loves most about bread is that it is highly instinctual and forces you to be present.

Andrew Cruz - Lead Night Baker
Andrew Cruz is an Islander Boy who was born and raised in Guam, but moved to Cali when he was diagnosed with cancer. Food played an important role in comforting him after treatments and surgeries, which in turn helped him decide to enter into the food industry. He worked as a server and prep cook before attending school, but it was there that he found his path in pastries. Andrew has a big sweet tooth and loves the beauty and art that goes into making pastries.

Emma Koehler - Lead Baker
Emma is a San Francisco native with 10 years of experience in Michelin star and James Beard Award winning kitchens. She started her career in restaurants and turned to bakeries when she fell in love with the art of laminated doughts and viennoiserie. She enjoys the challenge of creating new pastries and flavor combinations. Apart from baking, Emma loves disc golfing, gardening, and cooking. Her nickname is "The Machine".
